Truffle Mezcal
Serves: 1 (Easily scalable for additional servings)
60ml truffle oil–washed mezcal (directions to make below)
30ml fresh lime juice
15ml agave syrup
Truffle salt (for rimming)
Method
Rim your glass with truffle salt and set aside.
Add truffle-washed mezcal, lime juice, and agave syrup into a cocktail shaker.
Fill the shaker with ice and shake vigorously until the outside of the shaker is frosty.
Strain into your prepared glass and serve immediately.
To make truffle oil–washed mezcal:
Mix 1 part truffle oil with 10 parts mezcal in a sealed jar.
Set the jar in a warm water bath for 2 hours, then freeze overnight.
Once the oil solidifies, strain the mezcal through a coffee filter.
Store chilled.
