Watermelon Sorbet
Recipe
Ingredients
1 scoop of watermelon sorbet (from Early Bird Gelato. Not sponsored, just our favourite)
For the Black Sesame Tuile
2 gr charcoal powder
10 gr sugar
10 gr black sesame seed flour
80 gr olive oil
90 ml water
For the watermelon pickles
1 medium watermelon
250 ml filtered water
75 gr sugar
14 gr citric acid
40 ml lime juice
10 gr lime zest
10 ml rice wine vinegar
20 gr coriander
2 gr coriander seeds
1 tablespoon sea salt
Instructions
For the Black Sesame Tuile
1. Mix Ingredients: In a bowl, combine the charcoal powder, sugar, and black sesame seed flour. Slowly add the olive oil and water, stirring until the mixture is smooth and free of lumps.
2. Prepare the Pan: Heat a non-stick pan over medium-high heat.
3. Cook the Tuile: Pour a small amount of the mixture into the pan (about 1-2 tbsp) and spread it out thinly to form a round shape. As it cooks, the mixture will bubble and create a lace-like texture.
4. Remove and Cool: Once the tuile becomes crisp, carefully remove it from the pan using a spatula. Place it on a cooling rack to set.
5. Serve: Once cooled, the tuile is ready to serve. Perfect for adding texture to desserts or as a garnish for savory dishes.
For the watermelon pickles
1. In a big jar, add all the ingredients. Stir it well until the sugar is dissolved, then set it aside.
2. To make the watermelon slices, cut the watermelon into slices and remove most of the red part. Take a vegetable peeler and try to make some long ribbons.
3. Once you are done, place all the ribbons into the jar and at the top add the fresh coriander. With a spoon, make sure that everything is submerged in the brine. Close the lid and flip the jar upside down, and then keep it in the fridge for 12 hours.
4. After the 12-hour rest, strain the brine to take the coriander seeds out and keep only the clear liquid, and place the watermelon ribbons into the brine.
Assemble the plate
On a small and elegant plate, add a spoonful of a good-quality watermelon sorbet. Gently put on top of the ice cream the black sesame tuile (ideally with a kitchen tweezer). Finish with 4-5 pickled watermelon ribbons in front of the ice cream.
