Brioche with tomatoes
Recipe
1 thick slice of sourdough bread
1 tablespoon organic unsalted butter
4-5 thin slices of Räßkäse
2 slices of green and black heirloom tomatoes
salt and pepper
Garnish: chilli honey
2-3 tablespoons hot chili flakes (or use crushed dried chilies, or 1-2 fresh hot chilies, sliced)
1 cup high-quality honey
1 tablespoon apple cider vinegar (optional)
Instructions
Make the chilli honey
Add the peppers and honey to a small pot. Heat and simmer for 1-2 minutes to infuse them with the pepper flavor and heat. Do not allow the honey to boil.
Remove from heat and stir in the vinegar (if using). If using fresh peppers, strain the honey into a jar. If using dried peppers, strain only if desired.
Cool and store in an airtight glass container. Makes 1 cup.
Spread the butter on the sourdough brioche bread. With a peeler, cut thin slices of Räßkäse, and add them on top of the bread. Add 2-3 slices of green and black heirloom tomatoes and finish with a drizzle of chilli honey. Sprinkle some fleur de sel and some freshly ground pepper.
